Lucila Fernandez's farm is dedicated to producing exceptional coffee. The farm's process begins with the careful de-pulping of cherries on the day of harvest, followed by a dry fermentation period of 18-24 hours in dedicated tanks. The parchment is then rinsed with water before being transferred to a parabolic solar dryer. Over the course of 8-14 days, the parchment is sorted by hand to remove any defective beans, ensuring only the highest quality remaining.
