Iwannitosa Putra is the owner of Putra Gayo, a mill and farm within Aceh, Sumatra. Their farm covers 250 hectares of land with around 275,000 coffee trees. Iwannitosa specializes in natural processed coffees, a process where coffees dry ferment for 10-12 hours, and then dry for 30 days. In natural processing, the coffee cherries are dried whole, with the beans remaining in contact with the fruit's pulp and skin. This contact infuses the beans with the sugars, acids, and complex compounds present in the cherry, resulting in intense, fruit-forward flavours.
